Hungarian Goulash

Great and easy goulash for a gathering with just enough spice to add a little bite.
Ingredients
1/2 lb. bacon
1/2 lb. ditalini noodles
1 can 15 oz white kidney beans
(drained and rinsed)
1/2 large yellow onion
2 c. V-8 juice (low sodium)
1 c. beef broth (low sodium)
1/2 t. garlic powder
1/2 t. celery powder
1/8 t. ground black pepper
1/2 t. flaked sea salt
1/4 t. hot Hungarian paprika
Directions
- Cook and drain noodles as package instructs, but only to al dente, they will finish cooking in the broth.
- Set noodles aside.
- Dice bacon in 1/2" pieces and brown in large 6 qt. kettle. When browned nicely and crispy, move the bacon to a bowl leaving drippings in kettle.
- Add the diced onion into drippings and cook until tender. Return the bacon, add kidney beans, V-8 juice, beef broth and spices.
- Stir to deglaze pan; bring to a boil, add macaroni, cook for 5 minutes and serve.
