Hot Brussel Sprout Slaw

Shredded brussel sprouts in a hot vinegarette dressing.
Ingredients
1 lb. Brussel sprouts shredded
1 small onion finely diced
1/3 cup diced red pepper
4 strips Sugardale Ready Bacon
2 TBS. olive or veg. oil
2 TBS. apple cidar vinegar
salt and pepper to taste
Directions
- Wash brussel sprouts, remove loose damaged outer leaves.
- Cut out core in v-shape. Shred like cabbage for slaw.
- Place in collinder and rinse under cold water. Set aside.
- Dice onion and pepper. Set aside.
- Heat oil on med. high in large skillet or pan.
- Cut bacon into small pieces and add to skillet. Stir 1 minute.
- Add diced onion and red pepper. Stir 1 minute.
- Add shredded brussel sprouts and mix well.
- Add the vinegar and toss well.
- Sprinkle lightly with salt and pepper. Stir 1 minute and then remove from heat and serve hot.
- May adjust vinegar to taste.
